In the basement, the Merlot is pressed directly, the Garnacha comes from and the Syrah is used in entire grapes. It is kicked with feet before a 5-day maceration is carried out with the skins. It fermented in stainless steel tanks with local yeasts. After the fermentation, it rests for 10 months in the same barrels with its fine yeast. It is bottled without being clarified, stabilized or filtered and without the sulfur additive.
