Fabio is a crazy guy. But you quickly put it in your heart. Because you will immediately ask himself: What the hell does an Italian do in the middle of Spain, in the Sierra de Gredos? Those who also work in an old wine cellar that would have to be brought almost entirely to scratch?
 
So he is the fabio. He experimented with grapes, with always new methods, and he does not follow any standard. He wants to make restless wines, always at the limit, always to discover something new and if not, then to invent. Fabio only trusts his instincts. He also cultivates very unconventional ideas. An idea: the rebirth of sweet wines. For example, who knows Chelva? So far it was a house wine variety that nobody cared about. Fabio makes it a fantastic wine that has something from Garnaca.
 
And if you tasted your Garnachas, you have something from a fruit explosion in your mouth. And finally the whites: Airén, Albillo, Chelva… Wines full of rock’n roll. The feet don't stop there. Once you have tasted fabios wines, then you understand the difference what that means: to just look at life passively - or to actively participate.
