Empirical Spirits

Lars Williams and Mark Emil Hermansen, both of whom worked in the renowned Noma restaurant in Copenhagen, founded Empirical Spirits 2017.

They say: “We are inspired by the empirical method: the conviction that knowledge is gained from experience; collected with the senses. Our company focuses on taste and details and combines low-temperature distillation techniques, fermentation and unique, high-quality ingredients that are carefully obtained worldwide to create spirits with the eyes of a chef. ”

They distilled under vacuum and can thus capture and maintain the finest notes of the ingredients used. All of their spirits are twice fermented to increase the depth and complexity.
