Fermentation in stainless steel tanks. 10 days maceration. After the Malolactic fermentation, expansion to fine yeast for 10 months in stainless steel tanks. Without other inputs than a moderate dosage of SO2 <27mg/l. Unfiltered wine, not beautified.
An intense nose with very bloody, salty and iodized aromas, accompanied by a pretty black currant, black cherry and a gourmet bitter chocolate.
It is not completely dry on the palate, but very fresh and easy to drink. Although the tannins prevail and stop, the sips are only velvety. Excellent aromatic intensity on an expressive salty terroir, dark and light notes of black and red cherry, strawberry, cassis, dark chocolate and black pepper.
