|In the basement, 80% of the grapes are peeled and pressed, the rest macerated for 5 days with the shell. The fermentation takes place in stainless steel tanks with local yeasts. After the fermentation, it rests for 9 months in the same tanks with its fine yeast. It is bottled without being clarified, stabilized or filtered and without the sulfur additive.
