Fermented 14 days on the mash and then matured in the barrique with the complete yeast for 16 months.
Herbal tea, hay and dried apricot in the nose.
On the palate, the acid of apples, immature plums and gooseberries come first. The acid then dissolves into great fruit and yeast notes (orange, salt lemon, apple with brioche notes of Salmiak) and a hammer of eating notes comes to the finish
