This 20018 white from the black, whitewashed Pinot Noir, was on the second yeast for 18 months. The basic wine is spontaneously fermented, read very early, so that alcohol is 12.5 vol% here. All values: 12.5 vol%, 0.6g/l residual sugar, 5.6g/l total acid, 32mg/l So2
bouquet
Fine yeast notes mix in the nose with the scent of steamed Williams Christ pear and a little green apple.
taste
A very fresh and clear attack on the palate is followed by an elegant middle with subtle, oxidative approaches. Before the salty finale, the wine opens like a fresh yeast leaf.

The little story
All of our natural wines are titled as German wine, since unfiltered wines do not correspond to the idea of the German winegrowing institutes. From this circumstance, protected origins such as Grauburgunder and Pinot Noir are unfortunately also taboo, which is why we chose the title "Dr Grau Natur".
